We only make this wine in particularly good years. It’s made without added sulphites, the only ones present are those produced by alcoholic fermentation. One could say it is a “traditional” wine, made like in the old days, before chemistry’s advent and abuse. That is why it has a peculiar taste, a taste we’re not used to anymore. Better drunk young since the lack of added sulphites makes it susceptible to a faster evolution.
Colour: intense ruby red with purplish reflections
Smell: intense, typical of red fruits, cherry and blackberry
Taste: harmonic, soft, full and with a slight almond aftertaste
Pairings: meat appetizers, carne cruda all’albese (steak tartare), vitello tonnato (veal with tuna mayo), entrées, white meat, medium-aged cheese and cured meat
